Welcome Chef DeRosett
With more than a decade of experience leading celebrated kitchens across the country, Chef DeRosett brings a refined yet approachable touch to The Publisher’s culinary program. His menus highlight seasonal ingredients, locally inspired flavors, and a deep commitment to memorable, guest-centered hospitality. Before joining The Publisher, DeRosett served as Executive Chef at Hotel 1928 in Waco, Texas, where he oversaw five full-service dining outlets. His background also includes leadership roles at Honeywood in Lexington, Kentucky—where he collaborated closely with a James Beard–recognized chef—and at 21c Museum Hotels, where he honed his creative and operational expertise in dynamic, high-volume environments.
Chef DeRosett’s culinary philosophy blends mentorship, innovation, and a storytelling approach to food. His dishes aim to connect guests to a sense of place, often drawing inspiration from the people and experiences that have shaped his career. A favorite example: his Jerk Hen entrée, originating from a recipe shared by a friend in Jamaica and now adapted into one of his signature seasonal offerings.
